1 cup fed & active sourdough starter**
1/3 – 2/3 cup warm water (about 100º- 110º)
1 teas. active dry yeast (optional if starter is very active)
2 tablespoons extra-virgin olive oil
4.25 oz all Purpose or Bread flour* (appr. 1 cup)
2.125 oz 00 Italian flour* (appr. 1/2 cup)
3/4 cups semolina*
1.25 teas. fine sea salt

Proof yeast with warm water and pinch of sugar. Mix in wet ingredients, combine in dry ingredients and mix with a stand mixer paddle for a couple of mins. Sourdough starter varies in wetness, adjust wet and dry until the dough is soft, and a little sticky. Switch to dough hook and knead until stretchy, 7 mins Put into oiled bowl, cover. Allow the dough to rise for 45 minutes; then refrigerate it for 4 hours (or up to 36 hours); this step will develop the crust’s flavor. It’ll continue to rise in the fridge, so make sure it’s in a big enough bowl. **Goldrush Sourdough starter packets can be found at Shopper’s Corner.
After the cold rest, divide the dough in half or in thirds. Shape into pizza crusts. Cover the dough, while you heat your oven to 450°F. (put a pizza stone on the lowest rack) Let your pizza rest/rise for 60 minutes before baking. Bake on the stone or on the lowest oven rack on a cookie sheet for 4-6 minutes, let it rise and just set. To have pizza right away, top it with your favorite toppings, return to an upper rack of the oven (not to the stone), and bake for an additional 8 minutes, or until the crust is golden brown and the filling bubbly.
To serve pizzas some other time, cool the un-topped crusts, wrap them well in plastic wrap, store in fridge for a few days or longer in freezer. The use of semolina, bread and 00 flour makes the crust better, crunchy and more stretchy to roll out. Use 2.25 cups AP flour if semolina, bread and/or 00 is not available (*all the recommended flours can be found also at Shopper’s Corner – 622 Soquel Avenue Santa Cruz, CA 95062).
